Outdoor Kitchens: Chulha, Tandoor and Long Lunches

For most families the farmhouse weekend is built around one long meal. A simple outdoor kitchen makes that meal the point of the day, not a chore.

The traditional chulha and tandoor still work beautifully on a farm plot: food cooked slowly over wood or cow-dung cakes, eaten in the shade. Most owners pair one with a covered prep counter, a sink with running water and a gas or induction backup for the days a fire is not practical.

Keep it close to the house but downwind of it, on a paved base, with somewhere to store dry fuel out of the rain.

How to Plan It

Four Decisions That Make It Work

  1. 01 Shade First A tin, tile or thatch roof over the cooking and eating area - summer sun makes an open kitchen unusable by late morning.
  2. 02 Water and Drainage A sink with a proper drain away from the lawn. Grey water should not pool where people sit.
  3. 03 A Fire You Can Use Clay chulha or tandoor, plus an LPG or induction backup. Air-quality restrictions in NCR can limit wood fires, especially in winter.
  4. 04 Storage A lockable cupboard for utensils and a dry, raised store for fuel. Anything left out gets damp in the monsoon.

Through the Year

Meals Outdoors in Winter, Summer and Monsoon

Winter Oct - Feb

The best season: sarson ka saag, makki ki roti and long afternoons in the sun.

Cool, clear days; fog and haze on some winter nights.

Summer Mar - Jun

Cook early, eat in deep shade or move indoors after noon.

Dry heat building to well over 40°C by May and June.

Monsoon Jul - Sep

A covered kitchen is essential; keep fuel dry and drains clear.

Heavy rain, humidity, fast growth and mosquitoes.

The Upkeep

What Someone Has to Do

  • Clean ash and refresh the clay lining of the chulha
  • Keep drains and the grease trap clear
  • Check gas fittings and the cylinder store
  • Seal and repaint the prep counter before the monsoon

Most owners keep a caretaker or mali on the plot. Ask us what the communities we list arrange for owners.

Before You Buy

Check These on the Plot

  • Which way the wind usually blows across the plot
  • A water connection near the house, with pressure
  • Whether the society or community rules allow open-fire cooking
  • Space for a covered area that does not need its own permission
